Mom’s Birthday cheesecake

Today is my mom’s birthday! She started a low carb lifestyle on Jan 1st of this year so no ordinary cake for her. I got this no-bake recipe for her from Low Carb Friends .com

2 8 oz packages of cream cheese at room temp

1 box of sugar-free jello   ( I used raspberry)

Beat cream cheese until smooth with a mixer. In a separate bowl, mix 1/2 cup of boiling water to your jello of choice and mix till dissolved. Add jello to cream cheese and mix until creamy.

I placed the mixture in gallon baggie and clipped corner for ease to pipe into cupcake liners. I used foil liners with the paper. I got 6 full cups from this.

Carb count from this was based on cream cheese of 32, 0 from jello.

6 servings 5.3 carbs

Place your cheese cake in the fridge to set.

I would use foil only next time. They kinda stuck to the paper. They were soft even though they were in the fridge for 5 hours. So if you have small glass bowls or dishes they would be work better placed in those. Mom and I ate these with a spoon. They were good, a little on the tart side but not too sweet. She put the rest in the freezer to prevent over eating……always a smart move when it comes to cheesecake!

Faygo Cupcakes

My daughter found this recipe on the net some where…she really likes the soda Faygo…and she knows I like to bake  so she sent this to me to try.

1 1/2 c self rising flour

1 1/4 c all-purpose flour

2 sticks butter

2 c sugar

4 lg eggs room temp

1/2 c milk whole (i used 2%)

1/2 20 oz bottle of Faygo soda I used grape  says grape red or orange works best

1 small pk of jello in the same flavor

1 tsp vanilla

Heat oven 350* line 24 cupcake with liners.

In a small bowel combine flours and set aside. In a large bowel cream butter with an electric mixer until smooth. Add sugar and beat until fluffy. Add eggs on at a time, beating well. Add the dry ingredients in three parts alternating with the milk and vanilla and soda. With each addition beat until incorporated but do not overbeat. Using rubber spatula to scrape down sides of the bowel. Spoon into cupcake liners, filling about 3/4 full and bake for 20 mins or until done.

Now I got 24 cupcake liners full and have some left over, so I got 36 out of mine.

 

 

 

 

 

 

 

Total bake time in my oven was 20 mins.

They turned out so light and springy! My taste-testers said they were awesome! I took a dozen with me to a family get together last night and they were hit hard! Everyone really enjoyed them. When they found out they were grape they gave a sceptical look, but after the first bite, just looks of joy.

Going to try a peach and orange flavor combo next time. A play on a fuzzy navel. Maybe with a cream cheese based frosting with a little peach schnaps and orange peel mixed in.

NOT LOW CARB FRIENDLY!!!!! 8)
